Here is a super easy and tasty gnocchi recipe that no one will even notice is gluten free!
Makes a creative and delicious snack, or can be served with the sauce of your choice!
Ingredients:
700 gr of kumara (sweet potatoes) cubed and boiled
300 gr potatoes potatoes, cubed and boiled
1/2 tsp of nutmeg - freshly grated is best
3 tbsp of Vutter of your choice(I used Vutter Garlic for the dough and original to fry them on)
120 gr of gluten-free flour blend, more for dusting
120 gr of tapioca flour
80 gr of cornstarch
1 tsp of salt
Method:
Drain and mash the cooked kumara & potatoes, add the nutmeg and 2 tbsp of Vutter (or more to taste). Cool it down
Once cool, add salt and the flours and combine it all with a spoon. Add a bit of water if needed, but you really want a uniform dough that holds together but doesn't stick to your fingers (images below)
Use extra flour to dust a clean surface and roll the dough into a long rope shapes. Use a fork to mark and cut them into your favorite gnocchi shape/size
Pan fry them in Vutter till crispy and golden and serve as a snack or with your favourite topping/sauce!
