A good one for baking with kids during the school holidays! Also a great lunch box treat.
Recipe
Ingredients:
1 cup of flour
¼ tsp of baking soda
1 tsp ginger
¼ tsp cinnamon
½ cup brown sugar
75g Vutter (Original or Spiced)
2 tsp aquafaba (the liquid in a can of chickpeas)
2 tsp golden syrup
Preheat oven to 180°C on bake, and line 2 light-coloured baking trays with baking paper.
Mix together flour, baking soda, spices, and sugar. Add Vutter and rub together until it resembles fine breadcrumbs. Add aquafaba and golden syrup and mix until it forms a firm dough.
Cover and chill for 30 minutes.
Dust a counter with flour and roll out dough to preferred thickness – between 5 and 10mm. Using biscuit cutters, cut out shapes and place onto baking trays. Bake for 10 minutes, and then cool on a rack before eating.
